Making white toast bread


Ingredients:

Bread flour: 2000g Sugar: 280g

Yeast: 20g Improver: 5g

Milk powder: 80g Egg white: 200g

Sweetened condensed milk: 100g Salt: 40g

Yihao premium yellow butter : 260g

Production process:

1. Mix high-gluten flour, milk powder, sugar, bread improver, and yeast at low speed until evenly combined.

2. Add egg white, sweetened condensed milk, and water; stir until gluten is fully developed, then add Yihao premium yellow butter salt and stir until the final stage is reached.

3. Bulk fermentation: temperature 28°C, humidity 75-80%, fermentation time 30 minutes.

5. Roll out the dough, roll it up, and place three rolls in one container.

6. Final fermentation: temperature 32°C, humidity 75-80%, time 60-90 minutes until the mold is 80% full, then bake.

7. Top heat: 180°C, bottom heat: 180°C, approximately 35 minutes.
