Yihao Baking Recipe: Lazy Afternoon Sweet Tea - Sand Cake


Sand cake, a delicious dessert, is more delicate than ordinary pound cake and has a sandy texture when chewed.


Ingredients

Cake Part

Yihao Premium Shortening 125g Fine Sugar 125g

3 Eggs Vanilla Extract A Few Drops

A Pinch of Salt 100g Low-Gluten Flour

100g Corn Starch 3g Baking Powder

15ml Rum 15-30ml Milk

Lemon Frosting

25g Yihao Premium Shortening 15-30ml Lemon Juice

150g Powdered Sugar

Instructions

1. Preheat oven to 180 degrees. First, make the cake part: Yihao Premium Shortening Soften until easily pressed with a spatula, add fine sugar and beat until fluffy and white.

2. Beat the eggs and add them in small amounts one at a time. Yihao Premium Shortening Into the mixture; after each addition, beat until the butter mixture is smooth before continuing.

3. After all the egg liquid is added and mixed well, add vanilla extract and salt in turn.

4. Sift together the low-gluten flour, cornstarch, and baking powder.

5. Add the sifted flour to step 3 in 2-3 additions, mixing with a spatula. Once the flour granules have completely disappeared, add the rum.

6. Add an appropriate amount of milk according to the batter's consistency. Check the batter's firmness: scoop up a spoonful of batter with a spatula and let it drip; if it falls naturally, the consistency is ideal.

7. Pour the batter into the mold and gently shake the mold to smooth the surface of the batter.

8. Place in the oven and bake at 180 degrees in the middle-lower section for 45-50 minutes. Remove and let cool on a wire rack.

9. Making Lemon Frosting : Put all the lemon frosting ingredients in a bowl and mix. If not using immediately, keep the mixed lemon frosting warm.

10. Pour the lemon frosting over the cake and wait for it to set.
