【Baking Recipe】Egg Yolk Pastry


Ingredients:

Dough:

Cake flour: 400g, High-gluten flour: 300g

Powdered sugar: 150g Yihou anhydrous shortening 120g

Yihou liquid shortening 100g

Warm water: 350g

Oil pastry:

Cake flour: 400g

Butter: 200g

Filling:

Red bean paste: 1800g

Cooked salted egg yolks

Instructions:

1. Dough: 1. High-gluten flour, cake flour, powdered sugar, Yihou anhydrous shortening, Yihou liquid shortening Mix well.

2. Add water and mix until smooth and non-sticky. Let it rest for 20 minutes.

2. Oil pastry: 1. Mix all ingredients well.

3. Shaping: 1. 25g dough, 10g oil pastry, roll twice.

2. 35g red bean paste and one cooked salted egg yolk.

3. Brush with butter on the surface.

Oven temperature: Upper fire 210°C/Lower fire 190°C, Time: about 22 minutes
