Eggs: 2, Milk 150ml
Salt 1 teaspoon (5g)
Milk powder 60g
White sugar 90g
Fresh cream 60g
Custard powder 2 teaspoons (10g)
High-gluten flour 500g
Yihao yellow butter 60g
Yeast powder 2 teaspoons (10g)
Pork floss 200g
Egg yolk liquid appropriate amount
Mix high-gluten flour, eggs, milk, salt, milk powder, white sugar, fresh cream, custard powder, yeast powder, and Yihao yellow butter together and knead into a smooth dough.
Let the dough rise for about 1 hour, the dough will ferment to twice its original size, then take it out and divide it into small doughs weighing 120g each. Then roll them into small balls, relax for another 10 minutes, then roll them into skins and wrap them with pork floss.
Then turn the closure down, spray a little water on the surface, and then place it in a moist and warm place for secondary fermentation for 1-2 hours. Preheat the ACA oven to 180℃, brush the egg liquid on the surface of the bread, then score three cuts, and put it in the middle layer of the ACA oven and bake for 15 minutes.
When the surface is colored, cover with tin foil, adjust the temperature to 160℃ and bake for another 20 minutes.
